May is one of my favorite months for grilling. First, it is the National BBQ Month. Second, it kicks off the "grilling season" for those folks that don't grill all year long. Third, it has the second busiest grilling holiday of the year - Memorial Day. Yep, May is the month when everyone embraces the outdoor lifestyle, cooking and entertaining in backyards across the country and I love that.

I have said before, the Char-Broil® Commercial grill one of the top 2 gas grills that I have ever used. My newer, bigger Commercial grill has everything I loved about the 3 burner version plus a few extras.

The most important feature to me is the TRU Infrared™ system. I never enjoyed using a gas grill until I got the Commercial grill. TRU Infrared™ is the best featured of this grill because of the benefits.
- No flare ups - The emitters block the actual flames from touching your food. You could theoretically get enough grease on the emitter to catch fire, but I've never had that happen in 2 years of heavy grilling.
- Up to 50% juicier food - The problem with most gas grills is they use mostly hot air (convective heat) which dries out the surface of meat. This TRU Infrared™ system converts the burner's heat into infrared heat in a balance similar to real fire.
- Even heat - The emitters also balance out the delivery of the heat which minimizes hot spots. Even heat means even cooking and better fire.
- More efficient - The system is more efficient and uses less propane or natural gas than standard gas grills. Remember, BTU is a measure of fuel consumption, not power output.

The one touch Surefire electric ignition has not failed on any of my Char-Broil® grills. The batteries have had to be replaced (single AA battery) but the igniter still clicks and fires every time. |

So for a no fuss, easy grill, let's make a no fuss, easy steak! Start with quality steaks, something USDA Choice or better, salt, pepper, and a simple butter topping that will impress your guests this Memorial Day.
Ribeye Steak with Garlic Chile Compound Butter
serves 4
Ingredients
- 4 ribeye or strip steaks, 1" thick, boneless, left at room temperature for 1 hour
- Kosher salt
- coarse ground Malabar or Tellicherry black pepper
- 1 stick unsalted butter, softened by leaving out at room temperature for 1 hour
- 1 tablespoon minced garlic
- 2 tablespoons red pepper relish
Instructions
- Preheat your grill to 450°f.
- In a small bowl, mix together the butter, garlic, red pepper relish, and 1/4 teaspoon salt.
- Season the steak on both sides with a liberal amount of salt and black pepper. The amount is up to your tastes but I do about 2 teaspoons each per steak.
- Grill the steaks until they are 127°f for medium rare, about 4 minutes per side. For medium pull them at 137°f, about 5 minutes per side.
- Remove, immediately top with a spoonful of the compound butter, and let rest for 5 minutes on a resting rack while you set up the rest of the food.
Notes/Substitutions
- Red pepper relish is the type used by a lot of sub sandwich shops and you can often buy theirs or you can find several brands at grocery stores.

While a lot of my readers are advanced grill masters, about half of my new readers are more casual grillers looking for help.
